Sip & Savor: April 2024

April showers not only bring May flowers but also a lovely thick film of yellow powder we know as POLLEN. As much as I love my new blooms, I’m not a fan of what the pollen does to my allergies, stirring up my sinuses with uncontrollable sneezing and insufferable congestion. That yellow stuff blows everywhere and on everything. I pretty much wait till it’s over to mop my floors, clean the deck or wash the car. Otherwise, my efforts are futile.

Since there is so much yellow everywhere and spring is here full force, this month’s sip & savor pairing celebrate the yellow theme with a more pleasant experience and flavor – lemon!

These lemon-lavender scones with lemon curd from Victoria magazine were the second ever scone recipe I ever baked. I fell in love instantly. If flavors were a couple in a Regency romance, lemon and lavender in these baked treats would be the equivalent of a Pride & Prejudice HEA. Darcy would totally be the lemon (citrus and sour) and Lizzie would be the lavender (herbal and savory). P&P fans, am I right?!

PRO tip: Instead of 2 tsp of lavender, I use 1 Tbsp of lavender or loose earl grey or paired tea below. (I LOVE baking with loose tea – the results are amazing!) Also, I make the lemon curd first then freeze in a jar while I bake the scones to chill the curd. While I have never made the glaze, try it and let me know how you like it!

To pair with the scones, I brew Harney’s Victorian London Fog, my all-time favorite tea! To me, it is the sophisticated version of Earl Grey with added vanilla flavor. If you’re feeling adventurous, elevate your teatime by making a London Fog tea latte at home using this elegant tea blend.

Lemon and lavender are my favorite “spring into summer” flavors. Not only are the colors and personalities contrasting but their tastes are complementary. For fans of an enemies-to-lovers trope, give this sip & savor pairing a chance and let me know what you think!
